Tom Calver took over cheesemaking at Westcombe Dairy from his father almost 15 years ago, following an apprenticeship at Neal's Yard Dairy. This cow’s milk Ricotta is crafted from the whey left over from Tom's make of Westcombe Cheddar and has a moussier, lighter texture than is typical of many continental versions.

Light and fresh tasting, with a rich, slightly grainy texture and a pleasantly salty, full dairy flavour. From cakes, pastries and puddings (try it in a cheesecake instead of cream cheese!) to savoury dishes such as pasta or pastry; it is an incredibly versatile ingredient. If you've never had it, try some simply spread on toast with a little jam or olive oil, or drizzle it with honey as a quick dessert.
