It’s in the name… Polly and Matt Hilton literally find and foster lost Devon Orchards, home to traditional, rare and rediscovered apple varieties. They help farmers to breathe life back into the crown jewels of our Devonshire countryside after losing 90% of our orchards since WWII. But it’s not just about conservation… Polly & Matt make some of the most refined ciders around using three traditional methods; Keeving, Petillant Natural (pet nat) & Methode Traditionnelle.
Paying homage to the Carter family, who protected 2 acres of ancient orchard in Rewe, Devon when hundreds of acres surrounding it were grubbed up following WWII, this cider is crafted using Methode Traditionnelle. The orchard gives us rare & unusual apple varieties dominated by fresh acidity and distinctive aromatics, including Devonshire Quarrenden, Ellisson’s Orange & Cornish Pine.
Pressed in 2018, a long, slow primary fermentation took place in stainless steel followed by 18 months in bottle - (12-15 months on champagne yeast). The result is an elegant, champagne-like cider with subtle notes of pear, wet-stone, green apple and sea spray. Pairs exceptionally well with rich cheese-based dishes such as tartiflette, and seafood, particularly shellfish.
