  • Berkswell (min 200g)

Sheila Fletcher first developed Berkswell at Ram Hall in the late 1980s. Her son Stephen now farms several hundred milking sheep whilst Julie Hay oversees the cheesemaking process. Often likened to a Manchego, Berkswell is a raw milk, hard sheep’s cheese that ranges from fresh and fruity to savoury. However, unlike Manchego, Berkswell is never pressed, with its distinctive shape moulded from a kitchen collider. Being a specialist cheese, much of what Julie and Stephen makes is eaten in restaurants, therefore during this crisis it’s important we continue to eat this incredible cheese.   • Ashcombe (min 200g)

From Manor Farm in the Cotswold village of Chedworth, Gloucestershire, David Jowett produces amazing cheese by hand using single herd, organic cow's milk from his own herd. Inspired by Morbier, a classic French cheese from the Franche-Comté, Ashcombe features a striking line of wood ash running through the centre of the cheese. Ashcombe is a large, flat, disc shaped cheese, which is carefully washed in a special brine solution to develop a bright terracotta rind. The rind is meaty and savoury, while the paste has aromas of warm milk and hay. The flavours are comforting and rich, reminding us of melted butter and fresh hazelnuts. The marriage of soil, climate and grape variety know as terroir, combined with New World and traditional techniques enable them to produce world-class, award-winning wines with unique regional characteristics. A ripe and youthful cool climate Pinot Noir showing wild strawberry, cherry with subtle spice. Full flavoured with juicy red berries and broad tannins. This light and fruit driven wine pairs perfectly with cheese!
